Amish Snow Day Soup
Ingredients
4 cups fresh or frozen corn kernels, 1 medium onion (diced), 3 medium potatoes (peeled and diced), 3 cups chicken or vegetable broth, 1 cup heavy cream, 2 cloves garlic (minced), 1 teaspoon salt, ½ teaspoon black pepper, ½ teaspoon smoked paprika, 2 tablespoons butter, 2 tablespoons all-purpose flour, 2 tablespoons chopped fresh parsley (for garnish)
Instructions
Melt butter in a large pot over medium heat, then cook diced onion and garlic for 3-4 minutes until fragrant. Stir in flour and cook for 1-2 minutes.
Gradually whisk in broth, bringing to a simmer for 5 minutes. Add potatoes, corn, salt, pepper, and smoked paprika, cover, and cook for 10-15 minutes until potatoes are tender.
Stir in heavy cream and let simmer for 5 more minutes. Adjust seasoning if needed, then serve hot with fresh parsley.
