- 1 lb prunes, seeded and chopped
- 1 lb raisins
- 1 lb currants
- 1 lb sultanas

- 2 cups grape juice or non-alcoholic rum extract (substitute for rum)
- 2 cups (1 lb) butter
- 2 cups (1 lb) sugar (brown or granulated)
- 10 large eggs
- 2 tsp grated lime peel
- 2 tsp vanilla extract
- 1 lb (4 cups) flour
- 4 tsp baking powder
- 2 tsp ground cinnamon
- 1/4 cup browning (adjust to desired color)
- 1 cup mixture of grape juice and cherry juice (for soaking)
Method:
1. Prepare the Fruit:
The day before baking, boil the fruits (prunes, raisins, currants, sultanas, mixed peels, and cherries) in a mixture of cherry juice and grape juice. Alternatively, soak the fruits in the juices for several days to deepen the flavor. Optionally, blend some of the fruits for a smoother texture.
