
Chicken Scampi with Garlic Parmesan Rice
Ingredients
For the Chicken:
* 500g skinless, boneless chicken breasts, thinly sliced
* Salt and pepper to taste
* 2 tablespoons olive oil
* 4 cloves garlic, minced
* 1/2 cup chicken broth
* Juice of 1 lemon
* 2 tablespoons unsalted butter
* 2 tablespoons fresh parsley, chopped
For the Garlic Parmesan Rice:
* 1 cup long-grain white rice
* 2 cups chicken broth
* 2 cloves garlic, minced
* 1/4 cup grated Parmesan cheese
* Salt and pepper to taste
* Fresh parsley, chopped, for garnish
Instructions
Prepare the Chicken:
* Season the chicken slices with salt and pepper.
* Cook the Chicken: Heat the olive oil in a skillet. Cook the chicken until golden brown, then set aside.
* Prepare the Sauce: In the same skillet, sauté the minced garlic, then add the chicken broth and lemon juice. Simmer until slightly reduced. Stir in the butter until melted. Return the chicken to the skillet, coating it with the sauce. Sprinkle with parsley.
Cook the Rice:
* Combine the rice, chicken broth, and minced garlic in a saucepan. Cook over medium heat until the rice is tender and the liquid is absorbed.
* Add the Cheese: Stir in the Parmesan cheese and season with salt and pepper.
Serve:
* Spoon the rice onto a plate, top with the chicken and sauce. Garnish with chopped parsley.
