Creamy Pralines & White Chocolate Fudge

Ingredients
For the White Chocolate Fudge:
12 oz white chocolate chips
14 oz sweetened condensed milk
For the Praline Topping:
1 1/2 cups fine granulated sugar
1 1/2 cups packed light brown sugar
1/4 tsp sea salt
1 cup evaporated milk
6 tbsp unsalted butter
1 tsp pure vanilla extract
2 cups roughly chopped pecans
Directions
Step 1: Make the White Chocolate Fudge Base
In a medium saucepan, melt the white chocolate chips and sweetened condensed milk over low heat, stirring constantly for 5–8 minutes until smooth.
Pour the melted mixture into a greased 9×13-inch baking dish, spreading it evenly. Let it set while you prepare the praline topping.
Step 2: Prepare the Praline Topping
In a large pot, combine the granulated sugar, brown sugar, sea salt, evaporated milk, and butter. Heat over medium-high heat, stirring regularly until the sugars dissolve and the mixture begins to boil.
Continue stirring until the mixture reaches 235°F on a candy thermometer (the “softball” stage).
Remove from heat and let it cool for about 5 minutes.
Stir in the vanilla extract and chopped pecans, mixing until the mixture thickens slightly and loses its glossy sheen. Be careful not to overmix to prevent graininess.
Step 3: Assemble the Fudge
Gently spoon the praline mixture over the white chocolate fudge, pressing it into an even layer.
Use a rubber spatula to fold the edges of the fudge towards the center, creating a marbled effect between the white chocolate and praline layers.
Smooth the top with the spatula to ensure it is even.
Step 4: Cool and Cut
Allow the fudge to cool completely at room temperature before cutting it into 1-inch squares.
