Roasted Salmon with Creamy Spinach & Red Pepper



Ingredients:
– 2 salmon fillets
– 2 cups fresh spinach
– 1/2 cup roasted red peppers, diced
– 1/2 cup heavy cream
– 2 tablespoons olive oil
– 2 cloves garlic, minced
– Salt and pepper, to taste
– Parmesan cheese, for garnish
Instructions:
1. Preheat Oven:
– Set oven to 375°F (190°C).
2. Prepare the Sauce:
– Heat olive oil in a skillet over medium heat.
– Add minced garlic and sauté until fragrant.
– Add fresh spinach and cook until wilted.
– Stir in diced roasted red peppers and heavy cream.
– Season with salt and pepper and let it simmer.
3. Assemble & Bake:
– Place salmon fillets in a baking dish.
– Pour the creamy spinach and red pepper mixture over the salmon.
– Bake for 15-20 minutes until fully cooked.
4. Serve & Garnish:
– Sprinkle with Parmesan cheese before serving.
