Sourdough Bagel Bites Recipe
Ingredients
For the dough:
1 cup active sourdough starter
1 ½ cups warm water
4 cups bread flour (plus extra for kneading)
2 tsp salt
1 tbsp honey or sugar (optional, for a touch of sweetness)
For boiling:
8 cups water
2 tbsp baking soda
1 tbsp sugar or honey
Toppings (optional):
Everything bagel seasoning
Sesame seeds
Poppy seeds
Garlic powder
Grated cheese (e.g., cheddar or parmesan)
Instructions
Make the dough:
In a large mixing bowl, combine the sourdough starter, warm water, and honey (or sugar). Mix well.
Gradually add the flour and salt, stirring until a shaggy dough forms.
Knead the dough on a floured surface for about 8–10 minutes until smooth and elastic. Alternatively, use a stand mixer with a dough hook.
Place the dough in a lightly oiled bowl, cover with a damp towel or plastic wrap, and let it rise at room temperature for 4–6 hours, or until doubled in size. For a slower rise, refrigerate overnight.
Shape the bagel bites:
Once the dough has risen, punch it down and divide it into small, bite-sized pieces (about 1–2 inches in diameter).
Roll each piece into a ball and place them on a parchment-lined baking sheet. Cover and let them rest for 30 minutes.
Boil the bagel bites:
Preheat your oven to 425°F (220°C).
In a large pot, bring the water, baking soda, and sugar (or honey) to a boil.
Boil the bagel bites in batches for about 30 seconds per side, then remove them with a slotted spoon and place them back on the baking sheet.
Add toppings:
While the bites are still wet from boiling, sprinkle them with your desired toppings (e.g., everything bagel seasoning, sesame seeds, cheese, etc.).
Bake:
Bake the bagel bites in the preheated oven for 15–20 minutes, or until golden brown and crispy on the outside.
Serve:
Let the bites cool slightly, then serve warm with cream cheese, hummus, or your favorite dip.
Tips:
For a chewier texture, let the dough cold-ferment in the fridge overnight.
Experiment with different toppings, such as cinnamon sugar for a sweet version.
