
Sourdough Pretzel Bites Recipe
Ingredients (Makes about 30-40 bites)
For the Dough:
1 cup active sourdough starter (100% hydration)
1 cup warm water
3 cups bread flour (plus extra for dusting)
1 teaspoon salt
2 tablespoons brown sugar or honey
2 tablespoons unsalted butter, softened (optional, for richer dough)
For Boiling:
8 cups water
1/2 cup baking soda
1 tablespoon salt
For Topping:
Coarse sea salt or pretzel salt
1 egg (for egg wash)
1 tablespoon water (for egg wash)
Instructions
1. Make the Dough:
In a large mixing bowl, combine the sourdough starter, warm water, brown sugar (or honey), and softened butter. Mix well.
Gradually add the bread flour and salt, stirring until a shaggy dough forms.
Knead the dough on a floured surface for 8-10 minutes, or until smooth and elastic. Alternatively, use a stand mixer with a dough hook.
Place the dough in a lightly greased bowl, cover with a damp towel or plastic wrap, and let it rise at room temperature for 4-6 hours, or until doubled in size. (For a slower rise, refrigerate overnight.)
2. Shape the Pretzel Bites:
Punch down the dough and turn it out onto a lightly floured surface.
Divide the dough into 4 equal pieces. Roll each piece into a rope about 1 inch in diameter.
Cut each rope into 1-inch pieces to form small dough balls. Roll each piece into a smooth ball and place them on a parchment-lined baking sheet.
3. Boil the Pretzel Bites:
Preheat the oven to 425°F (220°C).
In a large pot, bring the water, baking soda, and salt to a boil.
Boil the pretzel bites in batches for 20-30 seconds per side, then remove with a slotted spoon and place them back on the baking sheet.
4. Add Toppings:
In a small bowl, whisk together the egg and water to make an egg wash.
Brush the boiled pretzel bites with the egg wash and sprinkle generously with coarse sea salt or pretzel salt.
5. Bake:
Bake the pretzel bites for 12-15 minutes, or until deep golden brown.
Let them cool slightly on a wire rack before serving.
