Crustless Feta and Spinach Breakfast Quiche

Ingredients:

  • 1 cup fresh spinach, chopped
  • 1/2 cup crumbled feta cheese
  • 4 large eggs
  • 1/2 cup milk
  • 1/4 tsp garlic powder
  • 1/4 tsp onion powder
  • Salt and pepper to taste
  • 1 tbsp olive oil


Directions:

  • Preheat the oven to 375°F (190°C).
  • Heat olive oil in a skillet over medium heat. Sauté spinach for 2-3 minutes until wilted. Set aside to cool.
  • In a mixing bowl, whisk together eggs, milk, garlic powder, onion powder, salt, and pepper.
  • Stir in the sautéed spinach and feta cheese.
  • Pour the mixture into a greased 9-inch pie dish or quiche pan.
  • Bake for 30-35 minutes or until the center is set and lightly golden on top.
  • Let it cool slightly before slicing and serving
