Homemade Peppermint Patties

Ingredients
For the Peppermint Filling:

2 1/2 cups powdered sugar (plus extra for dusting)

2 tablespoons unsalted butter, softened

2 tablespoons heavy cream

1 teaspoon peppermint extract

1/4 teaspoon vanilla extract
For the Chocolate Coating:

2 cups semi-sweet or dark chocolate chips

1 tablespoon coconut oil or shortening
Optional Garnish:

Instructions
Make the Peppermint Filling:

In a medium-sized bowl, beat together the powdered sugar, softened butter, heavy cream, peppermint extract, and vanilla extract until smooth and well combined. The mixture should form a thick, yet pliable dough.

If the mixture is too sticky, add more powdered sugar a tablespoon at a time until it reaches the desired consistency.
Shape the Patties:

Dust your hands and work surface lightly with powdered sugar to prevent sticking.

Roll the peppermint mixture into small balls (about 1 teaspoon of filling each) and flatten them into discs with your hands or a rolling pin.

Place the shaped patties onto a parchment-lined baking sheet. Refrigerate for at least 30 minutes, or until firm.
Prepare the Chocolate Coating:

In a microwave-safe bowl, melt the chocolate chips and coconut oil (or shortening) together in 20-second intervals, stirring after each, until smooth and fully melted.
Dip the Patties:

Use a fork or dipping tool to dip each chilled peppermint patty into the melted chocolate, ensuring it is fully coated. Let any excess chocolate drip off.

Place the chocolate-coated patties back onto the parchment-lined sheet.
Garnish (Optional):

While the chocolate is still soft, sprinkle the top with festive holiday sprinkles for a fun, colorful touch.
Set the Chocolate:

Refrigerate the patties for at least 30 minutes, or until the chocolate has fully set.
