Pistachio Tiramisu

Ingredients:

  • 1 cup shelled pistachios (unsalted)
  • 1 cup strong brewed coffee (cooled)
  • 1/2 cup coffee liqueur (optional)
  • 1 cup heavy cream
  • 8 oz mascarpone cheese
  • 1/2 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 24 ladyfinger cookies
  • Cocoa powder (for dusting)
  • Chopped pistachios (for garnish)

Instructions:

1. Prepare the Pistachio Mixture:

  • In a food processor, blend the shelled pistachios until finely ground. Set aside a few tablespoons for garnish.

2. Mix the Coffee:

  • In a shallow dish, combine the brewed coffee and coffee liqueur (if using). Set aside.

3. Make the Cream Mixture:

  • In a large bowl, whip the heavy cream until soft peaks form.
  • In another bowl, combine the mascarpone cheese, granulated sugar, vanilla extract, and ground pistachios. Mix until smooth.
  • Gently fold the whipped cream into the mascarpone mixture until well combined.

4. Assemble the Tiramisu:

  • Quickly dip each ladyfinger into the coffee mixture, ensuring they are soaked but not soggy.
  • Layer half of the soaked ladyfingers in the bottom of a 9×9-inch dish.
  • Spread half of the pistachio cream mixture over the ladyfingers.
  • Repeat with another layer of soaked ladyfingers and the remaining pistachio cream.

5. Chill:

  • Cover the dish with plastic wrap and refrigerate for at least 4 hours, or overnight for best results.

6. Serve:

  • Before serving, dust the top with cocoa powder and sprinkle with chopped pistachios for garnish.
  • Slice and enjoy your delightful Pistachio Tiramisu!
