Pistachio Tiramisu


Ingredients:
- 1 cup shelled pistachios (unsalted)
- 1 cup strong brewed coffee (cooled)
- 1/2 cup coffee liqueur (optional)
- 1 cup heavy cream
- 8 oz mascarpone cheese
- 1/2 cup granulated sugar
- 1 teaspoon vanilla extract
- 24 ladyfinger cookies
- Cocoa powder (for dusting)
- Chopped pistachios (for garnish)
Instructions:
1. Prepare the Pistachio Mixture:
- In a food processor, blend the shelled pistachios until finely ground. Set aside a few tablespoons for garnish.
2. Mix the Coffee:
- In a shallow dish, combine the brewed coffee and coffee liqueur (if using). Set aside.
3. Make the Cream Mixture:
- In a large bowl, whip the heavy cream until soft peaks form.
- In another bowl, combine the mascarpone cheese, granulated sugar, vanilla extract, and ground pistachios. Mix until smooth.
- Gently fold the whipped cream into the mascarpone mixture until well combined.
4. Assemble the Tiramisu:
- Quickly dip each ladyfinger into the coffee mixture, ensuring they are soaked but not soggy.
- Layer half of the soaked ladyfingers in the bottom of a 9×9-inch dish.
- Spread half of the pistachio cream mixture over the ladyfingers.
- Repeat with another layer of soaked ladyfingers and the remaining pistachio cream.
5. Chill:
- Cover the dish with plastic wrap and refrigerate for at least 4 hours, or overnight for best results.
6. Serve:
- Before serving, dust the top with cocoa powder and sprinkle with chopped pistachios for garnish.
