Best Fluffy Pancake Recipe | Light & Fluffy Pancakes for Breakfast
Ingredients:
- 1 ½ cups all-purpose flour
- 2 ½ teaspoons baking powder
- ½ teaspoon salt
- 1 tablespoon granulated sugar
- 1 ¼ cups milk (any type)
- 1 large egg
- 3 tablespoons unsalted butter, melted
- 1 teaspoon vanilla extract (optional)
Optional Add-Ins:
- Blueberries, chocolate chips, or bananas
- Cinnamon or nutmeg
Directions:
1. Mix the Dry Ingredients:
In a large mixing bowl, whisk together the flour, baking powder, salt, and sugar until evenly combined.
2. Combine the Wet Ingredients:
In a separate bowl, whisk together the milk, egg, melted butter, and vanilla extract (if using). Pour into the well of the dry ingredients.
3. Gently Mix the Batter:
Stir the batter gently with a spatula or whisk until just combined. A few lumps are okay—don’t overmix to keep pancakes light and fluffy. Rest the batter for 5–10 minutes.
4. Preheat and Grease the Pan:
Heat a nonstick skillet or griddle over medium heat. Lightly grease with butter or cooking spray.
5. Cook the Pancakes:
Pour ¼ cup of batter onto the skillet for each pancake. Cook until bubbles form, edges are set (2-3 minutes). Flip and cook for 1-2 more minutes, until golden brown.
6. Serve:
Stack the pancakes and serve with your favorite toppings, like maple syrup, fresh fruit, or whipped cream.
