Ingredients
For the Chicken & Vegetables:
- 2 boneless, skinless chicken breasts (or 4 boneless thighs), sliced into thin strips

- 2 tbsp olive oil

Instructions
- Prepare the Chicken & Vegetables (5 minutes)
Slice the chicken, bell peppers, and onion into thin strips. In a small bowl, mix all the fajita seasoning ingredients together. - Cook the Chicken (6-8 minutes)
Heat 1 tbsp of olive oil in a large skillet over medium-high heat. Add the chicken strips and sprinkle half of the seasoning mix over them. Cook for 5-6 minutes, stirring occasionally, until the chicken is golden brown and fully cooked (internal temperature should reach 165°F / 74°C). Remove the chicken from the pan and set aside. - Cook the Vegetables (5-6 minutes)
In the same skillet, add the remaining 1 tbsp of olive oil. Toss in the bell peppers, onion, and the remaining fajita seasoning. Sauté for 5-6 minutes, until the vegetables are slightly charred but still crisp-tender. Add the minced garlic in the last minute of cooking and stir well. - Combine & Serve
Return the cooked chicken to the skillet and squeeze fresh lime juice over everything. Toss to combine. Warm the tortillas in a dry pan or microwave. Serve the chicken and vegetables in tortillas with your favorite toppings.
