Crispy, flavorful salmon patties packed with Mediterranean herbs and feta—perfect for a light and delicious meal!

Ingredients:

For the Patties:

  • 2 cans (6 oz each) salmon, drained and flaked
  • 1 cup fresh spinach, finely chopped (or ½ cup thawed, drained frozen spinach)
  • ¼ cup red onion, finely chopped
  • 2 cloves garlic, minced
  • ⅓ cup feta cheese, crumbled
  • ½ cup breadcrumbs (panko or regular)
  • 2 large eggs, beaten
  • 2 tbsp fresh parsley, chopped
  • 1 tbsp fresh dill (optional)
  • 1 tbsp lemon juice
  • 1 tsp lemon zest
  • 1 tsp dried oregano
  • Salt and pepper, to taste

For Frying:

  • Olive oil

Optional Garnish:

  • Lemon wedges
  • Tzatziki sauce

Instructions:

1. Prepare the Salmon

  • Drain the canned salmon and remove any bones or skin if desired.
  • Flake with a fork in a large bowl.

2. Sauté the Spinach

  • Cook spinach in a dry pan over medium heat for 2 minutes, until wilted.
  • Let cool, then squeeze out excess moisture.

3. Mix Everything

  • Add spinach, red onion, garlic, feta, breadcrumbs, eggs, parsley, dill, lemon juice, lemon zest, oregano, salt, and pepper to the salmon.
  • Mix well until combined.

4. Shape the Patties

  • Form the mixture into 6–8 patties, about 3 inches wide.

5. Cook Until Golden

  • Heat olive oil in a pan over medium heat.
  • Cook patties for 3–4 minutes per side, until crispy and golden brown.
  • Drain on paper towels.

6. Serve & Enjoy!

  • Serve with lemon wedges and tzatziki sauce or a fresh salad.
