No-Bake Blueberry Chia Seed Pie

Ingredients:
For the Crust:
- 1 ½ cups graham cracker crumbs
- 5 tbsp melted coconut oil (or butter)
- 2 tbsp maple syrup
For the Blueberry Chia Filling:
- 2 cups fresh or frozen blueberries
- 1 ½ cups full-fat coconut milk
- ¼ cup maple syrup (or honey)
- 1 tsp vanilla extract
- ½ tsp lemon zest
- ⅓ cup chia seeds
For Garnish (Optional):
- Fresh blueberries & blackberries
- Edible flowers
- Extra lemon zest
Instructions:
1. Prepare the Crust
- In a bowl, mix graham cracker crumbs, melted coconut oil, and maple syrup until well combined.
- Press the mixture firmly into the base of a 9-inch springform pan.
- Refrigerate while preparing the filling.
2. Make the Blueberry Chia Filling
- Blend blueberries, coconut milk, maple syrup, vanilla extract, and lemon zest until smooth.
- Pour the mixture into a bowl and stir in chia seeds.
- Let sit for 10 minutes, then stir again to prevent clumping.
- Cover and refrigerate for at least 2 hours (or overnight) until thickened.
3. Assemble & Chill
- Once the chia filling is set, pour it over the chilled crust and smooth the top.
- Refrigerate for at least 4 hours, or until firm.
4. Garnish & Serve
- Top with fresh berries, edible flowers, and lemon zest.
