This Mexican-inspired bowl brings together juicy chicken, smoky charred corn, and creamy lime sauce over fluffy rice—perfect for meal prep or a quick dinner!

Ingredients:

For the Base:

  • 2 cups cooked white or brown rice
  • 2 cups cooked chicken (shredded or diced)
  • 1 cup corn kernels (fresh, canned, or frozen)

For the Sauce:

  • ¼ cup mayonnaise
  • 2 tbsp sour cream
  • ½ tsp chili powder
  • ¼ tsp smoked paprika
  • Juice of 1 lime
  • Salt & pepper, to taste

For Toppings:

  • ¼ cup crumbled cotija or feta cheese
  • 2 tbsp fresh cilantro, chopped

Optional Add-ons:

  • Diced avocado 🥑
  • Sliced jalapeños 🌶️
  • Hot sauce 🔥
  • Extra lime wedges 🍋

Instructions:

1. Prepare the Corn

  • If using fresh corn, sauté in a dry skillet over medium heat until lightly charred.
  • If using canned or frozen corn, drain or thaw, pat dry, then sauté until golden.

2. Make the Sauce

  • In a small bowl, mix mayonnaise, sour cream, chili powder, smoked paprika, lime juice, salt, and pepper until smooth.

3. Assemble the Bowls

  • Divide cooked rice into bowls.
  • Top with shredded chicken and charred corn.
  • Drizzle with the creamy sauce.

4. Add Toppings & Serve

  • Sprinkle with crumbled cotija cheese and fresh cilantro.
