Ingredients:
For the Base:
- 2 cups cooked white or brown rice
- 2 cups cooked chicken (shredded or diced)
- 1 cup corn kernels (fresh, canned, or frozen)
For the Sauce:
- ¼ cup mayonnaise
- 2 tbsp sour cream
- ½ tsp chili powder
- ¼ tsp smoked paprika
- Juice of 1 lime
- Salt & pepper, to taste
For Toppings:
- ¼ cup crumbled cotija or feta cheese
- 2 tbsp fresh cilantro, chopped
Optional Add-ons:

Instructions:
1. Prepare the Corn
- If using fresh corn, sauté in a dry skillet over medium heat until lightly charred.
- If using canned or frozen corn, drain or thaw, pat dry, then sauté until golden.
2. Make the Sauce
- In a small bowl, mix mayonnaise, sour cream, chili powder, smoked paprika, lime juice, salt, and pepper until smooth.
3. Assemble the Bowls
- Divide cooked rice into bowls.
- Top with shredded chicken and charred corn.
- Drizzle with the creamy sauce.
4. Add Toppings & Serve
- Sprinkle with crumbled cotija cheese and fresh cilantro.
