Ingredients
- 2 cups fresh watermelon, cubed and seedless
- 10–12 fresh mint leaves (plus extra for garnish)
- 1–2 tablespoons granulated sugar (adjust to taste)
- 1 lime, juiced
- ½ cup white rum (optional)
- Club soda or sparkling water
- Ice cubes
- Lime wedges and mint sprigs for garnish
Instructions
1. Blend the Watermelon
- Add watermelon cubes to a blender.
- Puree until smooth.
- Strain through a fine mesh sieve if a smoother texture is preferred.
- You should have about 1–1.5 cups of juice.
2. Muddle the Mint
- In a shaker or large glass, add mint leaves and sugar.
- Gently muddle to release the oils (don’t tear the leaves too much).
3. Add Lime Juice
- Squeeze in the fresh lime juice.
- Stir to combine with the mint-sugar mixture.
4. Mix in Watermelon Juice and Rum
- Pour in the watermelon juice.
- Add white rum if using.
- Stir everything together well.

- Fill glasses with ice cubes.
- Pour the mixture over the ice.
- Top with club soda or sparkling water for fizz.
