Ingredients
For the Salmon:
- 4 skinless salmon fillets
- 1 tbsp olive oil
- Salt and black pepper, to taste
For the Filling:
- 2 cups fresh spinach, sautéed
- 1/2 cup cream cheese, softened
- 1/4 cup mozzarella cheese, shredded
- 1 garlic clove, minced
- Salt and pepper, to taste
For the Sauce:
- 2 tbsp butter
- 1 garlic clove, minced
- 1 cup heavy cream
- 1/4 cup Parmesan cheese, grated
- 1 tsp lemon juice
- Salt and black pepper, to taste
Instructions
- Preheat Oven: Set your oven to 375°F (190°C) and line a baking dish with parchment paper.
- Prepare the Filling: In a bowl, combine sautéed spinach, cream cheese, mozzarella, garlic, salt, and pepper. Mix until smooth.
- Stuff the Salmon: Slice a pocket into each fillet and fill generously with the spinach mixture. Place stuffed fillets in the baking dish.
- Sear and Bake: Heat olive oil in a skillet. Sear salmon fillets for 2–3 minutes per side until golden. Transfer to the oven and bake for 10–12 minutes until cooked through.
- Make the Sauce: In the same skillet, melt butter over medium heat. Add garlic and cook for 1 minute. Stir in heavy cream, Parmesan, lemon juice, salt, and pepper. Simmer for 3–4 minutes until slightly thickened.
- Serve: Pour the creamy garlic Parmesan sauce over the baked salmon. Garnish with fresh parsley and lemon wedges.
