Stuffed Salmon with Spinach and Cheese

Introduction
Elevate your salmon dinner with this rich and creamy stuffed version, bursting with sautéed spinach and melted cheeses. Finished with a luscious Parmesan garlic cream sauce, it’s a restaurant-quality dish you can make in under an hour.

Ingredients

For the Salmon:

  • 4 skinless salmon fillets
  • 1 tbsp olive oil
  • Salt and black pepper, to taste

For the Filling:

  • 2 cups fresh spinach, sautéed
  • 1/2 cup cream cheese, softened
  • 1/4 cup mozzarella cheese, shredded
  • 1 garlic clove, minced
  • Salt and pepper, to taste

For the Sauce:

  • 2 tbsp butter
  • 1 garlic clove, minced
  • 1 cup heavy cream
  • 1/4 cup Parmesan cheese, grated
  • 1 tsp lemon juice
  • Salt and black pepper, to taste

Instructions

  1. Preheat Oven: Set your oven to 375°F (190°C) and line a baking dish with parchment paper.
  2. Prepare the Filling: In a bowl, combine sautéed spinach, cream cheese, mozzarella, garlic, salt, and pepper. Mix until smooth.
  3. Stuff the Salmon: Slice a pocket into each fillet and fill generously with the spinach mixture. Place stuffed fillets in the baking dish.
  4. Sear and Bake: Heat olive oil in a skillet. Sear salmon fillets for 2–3 minutes per side until golden. Transfer to the oven and bake for 10–12 minutes until cooked through.
  5. Make the Sauce: In the same skillet, melt butter over medium heat. Add garlic and cook for 1 minute. Stir in heavy cream, Parmesan, lemon juice, salt, and pepper. Simmer for 3–4 minutes until slightly thickened.
  6. Serve: Pour the creamy garlic Parmesan sauce over the baked salmon. Garnish with fresh parsley and lemon wedges.
