Ingredients

  • 4 cod fillets
  • 2 tbsp olive oil
  • ½ cup cherry tomatoes, halved
  • ½ cup heavy cream
  • 2 tbsp unsalted butter
  • 2 cloves garlic, minced
  • Juice of 1 lemon
  • 1 tsp lemon zest
  • Salt and pepper, to taste
  • ½ tsp red pepper flakes (optional)
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Season the Fish: Pat cod fillets dry and season with salt and pepper.
  2. Sear the Cod: Heat olive oil in a skillet over medium-high heat. Sear cod fillets for 3–4 minutes per side until golden and cooked through. Remove and set aside.
  3. Make the Sauce: Lower heat to medium. In the same skillet, melt the butter and sauté garlic for about 1 minute until fragrant.
  4. Add Cream and Citrus: Stir in the heavy cream, lemon juice, and zest. Simmer gently until slightly thickened.
  5. Add Tomatoes: Toss in cherry tomatoes and red pepper flakes if using. Cook for another minute.
  6. Finish the Dish: Return the cod to the skillet and spoon the sauce over the fillets. Let everything warm through for about a minute.
  7. Serve: Garnish with chopped parsley and serve warm, ideally with rice, couscous, or crusty bread.
