Delicate, savory, and ultra-smooth, this steamed egg dish is a classic comfort food that comes together quickly with just a few pantry staples. Perfect as a light side or paired with rice for a soothing meal.
Ingredients
- 4 large eggs
- 1 cup warm water or chicken broth
- ¼ tsp salt
- ¼ tsp soy sauce (optional)
- ½ tsp sesame oil (optional)
- 1 green onion, finely sliced (for garnish)
- Ground white or black pepper, to taste
Instructions
- In a medium bowl, beat the eggs gently until well combined. Avoid over-whisking to keep the texture smooth.
- Add warm water or broth, salt, and soy sauce if using. Stir to blend.
- Strain the mixture through a fine mesh sieve into a heatproof bowl or dish for the silkiest consistency.
- Cover the bowl with plastic wrap or a plate to prevent water from dripping onto the surface.
- Set up a steamer and bring the water to a boil. Reduce to low heat and place the bowl inside. Cover and steam gently for 12–15 minutes.
- Check for doneness: the custard should be set with a slight jiggle in the center.
- Remove from the steamer. Drizzle with sesame oil, and top with green onion and a pinch of pepper.
