Ingredients

  • 4 medium ripe tomatoes, diced
  • ½ medium red onion, finely diced
  • 1–2 jalapeño peppers, seeded and finely chopped (adjust to taste)
  • ½ cup fresh cilantro, chopped
  • 2 cloves garlic, minced
  • Juice of 1 lime
  • ½ tsp salt (or to taste)
  • ¼ tsp black pepper (optional)

Instructions

  1. In a medium bowl, combine diced tomatoes, red onion, jalapeños, cilantro, and garlic.
  2. Squeeze lime juice over the mixture.
  3. Add salt and black pepper, if using.
  4. Gently stir to combine all ingredients evenly.
  5. Taste and adjust with more salt or lime juice, if desired.
