A bright, refreshing summer salad that combines juicy watermelon, crisp cucumber, and creamy feta with a burst of lime and fresh mint.

Ingredients:

  • 6 cups watermelon, cubed
  • 1 English cucumber, thinly sliced
  • 6 oz feta cheese, crumbled
  • 1 handful fresh mint leaves, chopped
  • 1 lime, zested and juiced
  • Sea salt flakes & freshly ground black pepper, to taste

Instructions:

  1. Prep the Produce:
    Cut the watermelon into bite-sized cubes and slice the cucumber into thin rounds or half-moons. Chop the mint leaves finely.
  2. Combine Ingredients:
    In a large serving bowl, toss together the watermelon, cucumber, and chopped mint. Gently crumble the feta cheese over the top.
  3. Add Flavor:
    Drizzle with fresh lime juice and zest. Season with sea salt flakes and black pepper to taste.
  4. Toss & Serve:
