Ingredients

  • 2 boneless, skinless chicken breasts
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup breadcrumbs
  • 1 tablespoon dried parsley
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper, to taste
  • 1/4 cup olive oil
  • 1/4 cup grated mozzarella cheese
  • 1/4 cup marinara sauce (optional)

Instructions

  1. Preheat oven to 375°F (190°C) and lightly grease a baking sheet.
  2. In a shallow bowl, mix Parmesan, breadcrumbs, parsley, garlic powder, onion powder, salt, and pepper.
  3. Coat chicken breasts in the mixture, pressing to adhere well.
  4. Heat olive oil in a skillet over medium heat and cook chicken for 3–4 minutes per side, until golden.
  5. Transfer to the baking sheet and top each breast with mozzarella.
  6. Bake for 10–12 minutes, or until internal temperature reaches 165°F (75°C).
  7. Serve with marinara sauce on top, if desired.
