Ingredients
- 2 large zucchinis, sliced into half-moons
- 2 cups mushrooms, sliced
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 teaspoon dried thyme
- Salt and pepper, to taste
- 1/4 cup grated Parmesan cheese (optional)
- Fresh parsley, chopped (for garnish)
Instructions
- Heat olive oil in a large skillet over medium heat.
- Add minced garlic and sauté for 1 minute, until fragrant.
- Stir in mushrooms and cook for about 5 minutes, until browned.
- Add zucchini slices and thyme. Season with salt and pepper.
