Ingredients:
2 cups (200g) pecans, chopped
2 cups (200g) Craisins (or other dried cranberries)
½ cup (1 stick / 113g) unsalted butter
2½ cups (500g) granulated sugar
½ cup (120ml) evaporated milk
½ cup (120ml) corn syrup (light or dark)
1 teaspoon vanilla extract
Instructions:
1. Prepare the Pecan and Cranberry Mixture:
In a medium mixing bowl, combine the chopped pecans and dried cranberries. Set aside.
2. Cook the Sugar Mixture:
In a medium saucepan, melt the butter over medium heat.
Add the sugar, evaporated milk, and corn syrup, stirring occasionally to combine.
Bring the mixture to a boil and let it boil for exactly 3 minutes, stirring occasionally to prevent burning.
3. Combine the Ingredients:
Remove the saucepan from the heat immediately after boiling.
Stir in the vanilla extract, then add the pecan and cranberry mixture.
Stir vigorously for 4 minutes to ensure everything is evenly coated and combined.
4. Form the Cookies:
Drop spoonfuls of the mixture onto wax paper or parchment paper to form individual cookies. Work quickly, as the mixture will begin to set as it cools.
5. Let Set:
Allow the cookies to cool and set at room temperature for 30 minutes to 1 hour before serving.
