Bang Bang Chicken Skewers

Ingredients:
For the Chicken Skewers:
1 ½ lbs (680g) boneless, skinless chicken breast or thighs, cut into 1-inch cubes
2 tbsp olive oil
1 tbsp soy sauce
1 tbsp honey
1 tsp garlic powder
1 tsp smoked paprika
½ tsp salt
½ tsp black pepper
Wooden skewers (soaked in water for 30 minutes)
For the Bang Bang Sauce:

½ cup mayonnaise
2 tbsp sweet chili sauce
1 tbsp Sriracha (adjust to taste)
1 tbsp honey
1 tsp lime juice


Instructions:
Prepare the Chicken:

In a large bowl, mix olive oil, soy sauce, honey, garlic powder, smoked paprika, salt, and black pepper.
Add chicken pieces and toss to coat evenly. Cover and marinate in the fridge for at least 30 minutes (or up to 4 hours for maximum flavor).
Make the Bang Bang Sauce:

In a small bowl, whisk together mayonnaise, sweet chili sauce, Sriracha, honey, and lime juice. Set aside.
Assemble the Skewers:

Thread the marinated chicken onto the soaked skewers.
Grill or Cook:

Grill: Preheat grill to medium-high heat. Cook skewers for about 10-12 minutes, turning occasionally, until chicken is cooked through (internal temp: 165°F/75°C).
Oven: Preheat oven to 400°F (200°C). Place skewers on a baking sheet and bake for 20-25 minutes, flipping halfway.
Air Fryer: Cook at 375°F (190°C) for 10-12 minutes, flipping halfway.
Serve:

Drizzle the Bang Bang sauce over the skewers or serve it as a dipping sauce.
Garnish with chopped green onions and sesame seeds if desired.
