Crustless Feta and Spinach Breakfast Quiche
Ingredients:
- 1 cup fresh spinach, chopped
- 1/2 cup crumbled feta cheese
- 4 large eggs
- 1/2 cup milk
- 1/4 tsp garlic powder
- 1/4 tsp onion powder
- Salt and pepper to taste
- 1 tbsp olive oil
Directions:
- Preheat the oven to 375°F (190°C).
- Heat olive oil in a skillet over medium heat. Sauté spinach for 2-3 minutes until wilted. Set aside to cool.
- In a mixing bowl, whisk together eggs, milk, garlic powder, onion powder, salt, and pepper.
- Stir in the sautéed spinach and feta cheese.
- Pour the mixture into a greased 9-inch pie dish or quiche pan.
- Bake for 30-35 minutes or until the center is set and lightly golden on top.
- Let it cool slightly before slicing and serving
