Strawberry Cheesecake Crumble Cookies

Ingredients:
Cookies:
- 1 cup softened unsalted butter
- 1 cup white sugar
- 1 large egg
- 1 tsp vanilla extract
- 2 ½ cups all-purpose flour
- 1 tsp baking powder
- ½ tsp salt
Cheesecake Frosting:
- 8 oz softened cream cheese
- ½ cup powdered sugar
- 1 tsp vanilla extract
- ½ cup heavy whipping cream
Crumble Topping:
- ½ cup all-purpose flour
- ¼ cup brown sugar
- ¼ cup melted butter
Topping:
- 1 cup diced fresh strawberries
Directions:
- Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a mixing bowl, beat butter and sugar until light and fluffy.
- Add the egg and vanilla, blending well.
- Gradually incorporate flour, baking powder, and salt until a dough forms.
- Roll dough into balls, slightly press them down, and place them on the sheet.
- Bake for 10-12 minutes until edges are firm.
- Cool completely.
For the frosting,
- beat cream cheese, powdered sugar, and vanilla until smooth.
- Pour in heavy cream and whip until light and airy.
For the crumble
- combine flour, brown sugar, and melted butter until crumbly.
- Bake for 5 minutes at 350°F until golden.
- Spread frosting on cooled cookies, sprinkle with crumble, and top with fresh strawberries.
