Strawberry Cheesecake Crumble Cookies

Ingredients:

Cookies:

  • 1 cup softened unsalted butter
  • 1 cup white sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 2 ½ cups all-purpose flour
  • 1 tsp baking powder
  • ½ tsp salt

Cheesecake Frosting:

  • 8 oz softened cream cheese
  • ½ cup powdered sugar
  • 1 tsp vanilla extract
  • ½ cup heavy whipping cream

Crumble Topping:

  • ½ cup all-purpose flour
  • ¼ cup brown sugar
  • ¼ cup melted butter

    Topping:
  • 1 cup diced fresh strawberries

Directions:

  • Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • In a mixing bowl, beat butter and sugar until light and fluffy.
  • Add the egg and vanilla, blending well.
  • Gradually incorporate flour, baking powder, and salt until a dough forms.
  • Roll dough into balls, slightly press them down, and place them on the sheet.
  • Bake for 10-12 minutes until edges are firm.
  • Cool completely.

For the frosting,

  • beat cream cheese, powdered sugar, and vanilla until smooth.
  • Pour in heavy cream and whip until light and airy.

For the crumble

  • combine flour, brown sugar, and melted butter until crumbly.
  • Bake for 5 minutes at 350°F until golden.
  • Spread frosting on cooled cookies, sprinkle with crumble, and top with fresh strawberries.
