Cherry Mash Bars


Ingredients:

For the Cherry Layer:

  • 2 cups powdered sugar, sifted
  • 1/4 cup unsalted butter, softened
  • 1/4 cup evaporated milk
  • 1 teaspoon pure vanilla extract
  • 1/4 teaspoon almond extract (optional, for added flavor)
  • 1 jar (10 oz) maraschino cherries, drained and finely chopped

    For the Chocolate Peanut Layer:
  • 1 1/2 cups semi-sweet chocolate chips
  • 1/2 cup milk chocolate chips
  • 1 cup creamy peanut butter
  • 1 cup crushed salted peanuts


    Directions:

    Prepare Your Pan:
  • Line an 8×8-inch baking dish with parchment paper, leaving a slight overhang for easy removal.
  • Lightly grease the parchment with non-stick spray.

    Make the Cherry Layer:
  • In a medium mixing bowl, beat together the powdered sugar, softened butter, and evaporated milk until smooth and creamy.
  • Add the vanilla extract and almond extract, if using, and mix well.
  • Fold in the finely chopped maraschino cherries, ensuring they are evenly distributed throughout the mixture.
  • Spread the cherry mixture evenly into the prepared baking dish.
  • Place in the refrigerator to chill while you prepare the chocolate peanut layer.

    Prepare the Chocolate Peanut Layer:
  • In a microwave-safe bowl, combine the semi-sweet chocolate chips, milk chocolate chips, and peanut butter.
  • Microwave in 20-second intervals, stirring after each, until the mixture is smooth and fully melted.
  • Fold in the crushed salted peanuts for a delightful crunch.

    Assemble the Bars:
  • Pour the chocolate peanut mixture over the chilled cherry layer, spreading it evenly with a spatula.

    Chill and Set:
  • Place the pan back in the refrigerator and chill for at least 2 hours, or until the layers are firm and set.

    Slice and Serve:
  • Use the parchment overhang to lift the bars out of the pan.
  • Cut into squares or rectangles with a sharp knife.
  • Serve chilled for a firmer texture or at room temperature for a softer bite.
