Pineapple Quick Bread Recipe: A Sweet, Moist Delight

This Pineapple Quick Bread is a deliciously sweet, moist treat perfect for breakfast or as a snack. The hint of pineapple makes it refreshing, while the cream cheese adds a rich, smooth texture. Top it with a simple glaze to elevate the flavor!

Ingredients:

For the Bread:

  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 3 oz cream cheese, softened
  • 1 cup granulated sugar
  • 3 teaspoons vanilla extract
  • 1 large egg, beaten
  • ½ cup sour cream
  • 1 (20 oz) can crushed pineapple, drained (reserve 2-3 tbsp of juice for the glaze)

For the Glaze:

  • 1 ½ cups powdered sugar
  • 2-3 tbsp reserved pineapple juice

Instructions:

  1. Prepare the Oven and Pan:
    Preheat your oven to 350°F (175°C). Grease and flour a 9×5-inch loaf pan.
  2. Mix Dry Ingredients:
    In a medium bowl, whisk together the flour, baking soda, and salt.
  3. Mix Wet Ingredients:
    In a large bowl, beat the softened cream cheese and sugar together until smooth. Add the vanilla extract, beaten egg, and sour cream, mixing well.
  4. Combine:
    Slowly add the dry ingredients to the wet ingredients, stirring until just combined. Fold in the drained crushed pineapple (reserve 2-3 tbsp of juice for the glaze).
  5. Bake:
    Pour the batter into the prepared loaf pan and smooth the top. Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
  6. Make the Glaze:
    In a small bowl, mix the powdered sugar with the reserved pineapple juice until smooth. Drizzle over the cooled bread.
  7. Serve:
