Ingredients:
- 1 cup unsalted butter, softened
- 1 tbsp vanilla extract
- 14 oz sweetened condensed milk
- 4 cups powdered sugar
- 14 oz sweetened shredded coconut
- 10 oz maraschino cherries, drained & chopped
- 3 cups pecans, chopped
- 6 cups semi-sweet chocolate chips
- 4 tbsp shortening
Instructions:
1. Prepare the Filling
- In a large mixing bowl, combine butter, vanilla extract, and sweetened condensed milk. Mix until smooth and creamy.
- Gradually add the powdered sugar, stirring until fully incorporated.
- Stir in the shredded coconut, chopped cherries, and chopped pecans until evenly mixed.
2. Chill the Mixture
- Cover the bowl and refrigerate for at least 2 hours, until firm enough to handle.
- Once chilled, scoop out small portions and roll into 1-inch balls.
- Place them on a parchment-lined baking sheet and refrigerate for another 30 minutes.
3. Melt the Chocolate
- In a double boiler or microwave-safe bowl, melt the chocolate chips and shortening together, stirring until smooth and glossy.
4. Coat the Candy Balls
- Using a fork or candy dipping tool, dip each chilled candy ball into the melted chocolate, letting excess drip off.
- Place the coated candies back on the parchment-lined baking sheet.
5. Set & Store
- Let the chocolate set at room temperature or refrigerate until firm.
- Store in an airtight container in a cool place or refrigerate for longer storage.
