Looking for something simple but impressive? These oven-fried feta rolls are golden and crunchy on the outside with warm, creamy cheese inside, all topped with a sweet and spicy chili honey. They’re quick to prep and even quicker to disappear.
Ingredients
- 200g feta cheese, crumbled
- 6–8 phyllo pastry sheets
- 2 tbsp olive oil or melted butter (for brushing)
- 2 tbsp honey
- 1/2 tsp chili flakes (adjust to taste)
- Fresh thyme or sesame seeds (optional, for garnish)
Instructions
1. Assemble the rolls
Place a sheet of phyllo pastry on a clean surface. Add a spoonful of crumbled feta to one end, then roll it up tightly like a cigar. Brush with olive oil or melted butter as you roll to help it seal and crisp up. Repeat with the remaining sheets.
2. Bake until golden
Preheat your oven to 400°F (200°C). Arrange the rolls on a baking sheet lined with parchment. Brush the tops with more oil, then bake for 15–20 minutes or until crisp and golden.
3. Make the chili honey
While the rolls bake, warm the honey and chili flakes in a small saucepan over low heat for a minute or two—just until it’s infused and fragrant.
4. Serve and enjoy
Drizzle the warm rolls with chili honey right before serving. Top with fresh thyme or sesame seeds if you like.

- Keep the phyllo pastry covered with a damp cloth while you work so it doesn’t dry out.
