Ingredients
For the Cheesecake Filling:
- 8 oz cream cheese, softened
- 1/2 cup granulated sugar
- 1 teaspoon vanilla extract
- 1 large egg
- 1 tablespoon all-purpose flour
For the Crust:
- 1 cup graham cracker crumbs
- 1/4 cup granulated sugar
- 1/4 cup unsalted butter, melted
For the Churro Coating:
- 1/2 cup granulated sugar
- 1 teaspoon ground cinnamon
- 1/4 cup unsalted butter, melted
Instructions
Step 1: Prep Your Oven
Preheat your oven to 325°F (160°C). Line a mini muffin tin with paper liners or spray with non-stick cooking spray.
Step 2: Make the Crust
In a medium bowl, mix together the graham cracker crumbs, 1/4 cup sugar, and melted butter until well combined.
Press about 1 tablespoon of the mixture into each mini muffin cup to form a crust.
Step 3: Prepare the Cheesecake Filling
In a mixing bowl, beat the cream cheese until smooth.
Add in the sugar, vanilla extract, egg, and flour. Mix until creamy and well combined.
Step 4: Assemble and Bake
Spoon the cheesecake filling over the crusts, filling each cup about 3/4 full.
Bake for 15–18 minutes, or until the edges are set and centers are slightly jiggly.
Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
Step 5: Add the Churro Magic
In a small bowl, mix the sugar and cinnamon.
Once the bites are cool, dip each one in melted butter and then roll in the cinnamon-sugar mixture until fully coated.
