A vibrant, refreshing twist on a classic mojito—perfect for summer gatherings, brunches, or just cooling off on a hot day.

Ingredients

  • 2 cups fresh watermelon, cubed and seedless
  • 10–12 fresh mint leaves (plus extra for garnish)
  • 1–2 tablespoons granulated sugar (adjust to taste)
  • 1 lime, juiced
  • ½ cup white rum (optional)
  • Club soda or sparkling water
  • Ice cubes
  • Lime wedges and mint sprigs for garnish

Instructions

1. Blend the Watermelon

  • Add watermelon cubes to a blender.
  • Puree until smooth.
  • Strain through a fine mesh sieve if a smoother texture is preferred.
  • You should have about 1–1.5 cups of juice.

2. Muddle the Mint

  • In a shaker or large glass, add mint leaves and sugar.
  • Gently muddle to release the oils (don’t tear the leaves too much).

3. Add Lime Juice

  • Squeeze in the fresh lime juice.
  • Stir to combine with the mint-sugar mixture.

4. Mix in Watermelon Juice and Rum

  • Pour in the watermelon juice.
  • Add white rum if using.
  • Stir everything together well.

5. Assemble the Drink

  • Fill glasses with ice cubes.
  • Pour the mixture over the ice.
  • Top with club soda or sparkling water for fizz.

6. Garnish and Serve

  • Add mint sprigs, lime wedges, or a small watermelon slice.
  • Serve immediately and enjoy!

Tips & Variations

  • Mocktail version: Skip the rum for a kid-friendly, alcohol-free version.
  • Make it spicy: Add a thin jalapeño slice while muddling the mint.
  • Batch prep: Mix watermelon juice, lime, mint, and sugar ahead; add soda and ice when serving.
