Peach Crumble Bars

These fruity, buttery bars are the perfect way to enjoy fresh peaches. With a tender crust, juicy peach filling, and a golden crumble topping, they’re a sweet treat for any occasion.

Ingredients

For the Crust & Crumble:

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • ½ tsp baking powder
  • ¼ tsp salt
  • 1 cup unsalted butter, cold and cubed
  • 1 egg, lightly beaten

For the Peach Filling:

  • 4 cups fresh peaches, peeled and sliced
  • 1 tbsp lemon juice
  • ½ cup brown sugar
  • ½ tsp ground cinnamon
  • ¼ tsp ground nutmeg
  • 2 tsp cornstarch

Instructions

  • Preheat oven to 375°F (190°C) and grease a 9×13-inch baking dish.
  • In a large bowl, combine flour, sugar, baking powder, and salt.
  • Cut in cold butter until the mixture resembles coarse crumbs.
  • Mix in the beaten egg until dough begins to come together.
  • Press half the mixture evenly into the bottom of the prepared baking dish.
  • In a separate bowl, toss peaches with lemon juice.
  • Add brown sugar, cinnamon, nutmeg, and cornstarch; stir to coat.
  • Spread the peach mixture evenly over the crust.
  • Crumble the remaining dough evenly on top.
  • Bake for 40–45 minutes, until topping is golden and filling is bubbling.
  • Let cool completely before slicing. Serve as-is or with vanilla ice cream or whipped cream.
