Ingredients
For the Pudding:
- 1 cup (200g) brown sugar
- 2 large eggs
- 2 tbsp cocoa powder
- 2 tbsp apricot jam
- 1¼ cups (310ml) cake flour
- 1 tsp baking soda
- Pinch of salt
- 1 tbsp butter, melted
- 1 tsp vinegar
- ½ cup (125ml) milk
For the Sauce:
- 1 cup (250ml) cream
- ½ cup (125ml) milk
- ½ cup (100g) sugar
- 100g dark chocolate, chopped
- 1 tbsp butter
Instructions
- Preheat Oven: Set oven to 180°C (350°F). Grease a medium baking dish.
- Make the Batter: Beat the brown sugar and eggs until pale and fluffy. Mix in cocoa powder and apricot jam.
- Combine Dry Ingredients: In a separate bowl, whisk together flour, baking soda, and salt. Gradually add to the egg mixture.
- Add Wet Ingredients: Stir in melted butter, vinegar, and milk until smooth and fully combined.
- Bake: Pour the batter into the prepared dish and bake for 35–40 minutes, or until a skewer comes out clean.
- Prepare the Sauce: While the pudding bakes, heat cream, milk, and sugar in a saucepan. Add chopped chocolate and butter, stirring until smooth and melted.
- Soak the Pudding: As soon as the pudding comes out of the oven, pour the warm chocolate sauce over the top to soak in.
Serve: Best enjoyed warm with a scoop of vanilla ice cream or a drizzle of custard.
