These fruity, buttery bars are the perfect way to enjoy fresh peaches. With a tender crust, juicy peach filling, and a golden crumble topping, they’re a sweet treat for any occasion.
Ingredients
For the Crust & Crumble:
- 2 cups all-purpose flour
- 1 cup granulated sugar
- ½ tsp baking powder
- ¼ tsp salt
- 1 cup unsalted butter, cold and cubed
- 1 egg, lightly beaten
For the Peach Filling:
- 4 cups fresh peaches, peeled and sliced
- 1 tbsp lemon juice
- ½ cup brown sugar
- ½ tsp ground cinnamon
- ¼ tsp ground nutmeg
- 2 tsp cornstarch
Instructions
- Preheat oven to 375°F (190°C) and grease a 9×13-inch baking dish.
- In a large bowl, combine flour, sugar, baking powder, and salt.
- Cut in cold butter until the mixture resembles coarse crumbs.
- Mix in the beaten egg until dough begins to come together.
- Press half the mixture evenly into the bottom of the prepared baking dish.
- In a separate bowl, toss peaches with lemon juice.
- Add brown sugar, cinnamon, nutmeg, and cornstarch; stir to coat.
- Spread the peach mixture evenly over the crust.
- Crumble the remaining dough evenly on top.
- Bake for 40–45 minutes, until topping is golden and filling is bubbling.
- Let cool completely before slicing. Serve as-is or with vanilla ice cream or whipped cream.
